The season is Lent. For those of you observing, Cheapo found a delicious "Chummy" breakfast recipe for you! She has been making these for years and people rave about them. Pair these wonderful scones with some Homemade Apple Butter and a scrambled egg - you'll have yourself a fantastic start to the day!
Apple Cheddar Scones
1 3/4 c. all-purpose flour ($.50)
2 TB sugar (pennies)
1 1/2 t. baking powder (pennies)
1/2 t. salt (pennies)
1/4 t. baking soda (pennies)
1 c. (4 oz.) shredded cheddar cheese ($.90)
1 c. diced, peeled apples ($.40)
In a bowl, combine the first five ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Gently fold in the cheese and apples. Turn onto a floured surface; knead 10 times. (it will be sticky) Pat into a 9" circle. Cut into eight wedges with a floured knife. Separate wedges and place on a greased baking sheet. Bake at 450 for 12-15 minutes or until golden brown. Yield: 8 scones
You will end up with the most tender, tasty scones you've ever eaten...at a cost of less than $.35 each! I recommend doubling the recipe because they are great re-heated or saved until the following day.
