In last week's process of cleaning out the baking cabinet, I found 2 bags of marshmallows, both open and half gone. Marshmallows aren't something we eat often and I could just see them getting hard as a brick, right there while looking at them. Hmmm... the best way to get rid of a lot of marshmallows at one time? Rice Crispy treats of course; an oldy but goody - with a little twist. Somewhere in the cereal cabinet, there just HAD to be a half eaten box of crispies to go along with the half eaten bags of mallows. Of course there was! Though, as good as Rice Crispy treats are, they are even better when you throw some Fruity Pebbles in the mix. Which takes us to Cheapo's Chummy Recipe of the Week.
Fred & Barneys
1/4 c. butter ($.50)
1/2 bag or 36 large marshmallows ($.60)
1/2 t. vanilla (pennies)
4 c. Rice Crispies ($.25)
1 1/2 c. Fruity Pebbles ($.25)
**Tip: Spray a dutch kettle with non-stick spray before melting anything in it. Also spray the spoon you'll be using - will save you from a sticky headache later**
Melt butter in dutch kettle over LOW heat. Add marshmallows & cook, stirring constantly until mallows are melted & mixture is smooth. Remove from heat immediately. Don't cook too long or it will carmalize and you will have rock hard treats with a burnt flavor. blah. Stir in vanilla and add cereals; stir unti coated. Butter a 9x13 pan and press warm mixture into it evenly. Butter your hands before pressing. Let cool & cut into bars. Makes 12 big squares at $.13 each.
