Frugal Friday: Chummy Recipe

About a week ago, I received a FREE Diabetic Cooking magazine in the mail. While flipping through the numerous recipes, I happened upon this one that really struck my fancy. It has been staring me in the face, calling my name for days so I feel the need to add it to my menu plan for next week. I can't guarantee this meal because I haven't made it yet. Although, with these particular ingredients, I'm not sure it can possibly go wrong.

Thai Chicken Satays

1 1/4 c. plain, low-fat yogurt, divided ($.75)
1/2 c. coconut milk ($.50 - I found this in the $1 section of the grocery store)
1 TB curry powder ($.30)
1 t. lemon juice (pennies)
1 t. grated fresh ginger ($.15 - I'll use powder since it's on hand)
1/2 t. salt (pennies)
1/2 t. black pepper (pennies)
1 clove garlic, crushed ($.10)
1 lb. chicken tenders ($1.99)
10 wooden skewers (12" - soaked in water 30 minutes) ($.20 - dollar section)
6 pita bread rounds, 6" each, cut in half ($2.98)
Chopped fresh cilantro ($.33)

Combine 1 c. yogurt, coconut milk, curry, lemon juice, ginger, salt, pepper & garlic in medium bowl; reserve 1/3 c. marinade. Add chicken to remaining marinade; cover & refrigerate at least 8 hours.

Remove chicken from marinade; discard marinade. Thread chicken onto skewers. Place skewers on broiler rack coated with nonstick cooking spray; place rack on broiler pan. Broil 4 to 5 inches from heat source 4 to 5 minutes. Turn skewers; brush with reserved marinade; discard remaining marinade. Broil 4 minutes more or until chicken is not longer pink in center. (I suppose you could just grill them as well)

Remove chicken from skewers. Fill pitas with chicken and top with cilantro and 2 t. yogurt.

Makes 6 servings; 2 filled pita halves per serving
